Start off by slicing the pork belly into cubes of roughly 2.5 cm. Don’t worry if it isn’t perfect; the important thing is to make sure the cubes are approximately the same size for consistency in taste and texture. Set aside cubes before continuing with the next steps.
In a bowl, mix the pork cubes with Shaoxing (Chinese rice wine) and dark soy sauce. The ratio of rice wine to dark soy sauce should be 1:1. Add in some sugar to balance out the flavors, and then leave the pork to marinate for at least 30 minutes.
Heat up a wok or pan on the stove over medium-high heat and then add the oil. Once the oil is hot, add in the marinated pork cubes and stir-fry until they turn golden brown. Season with some light soy sauce, according to your taste. Finally, add a bit of sugar to balance out any saltiness. Stir-frying time should be short--around 2-3 minutes--as we don't want the pork to become overcooked.
After the pork cubes have been stir-fried, add in star anise, hard boiled eggs and either brown bean paste or a splash of shaoxing wine (optional). Gently break up the eggs to better disperse them in the dish. You can also add extra salt and sugar to taste. Mix everything together thoroughly before turning down the heat and simmering for three to four minutes, stirring occasionally.
